Ingredients
- 1 lb flank steak or sirloin, thinly sliced against the grain
- 1/4 cup low-sodium soy sauce
- 1/4 cup beef broth
- 2 tbsp brown sugar (or honey)
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 tbsp cornstarch
- 2 tbsp vegetable oil, divided
- 2 cups broccoli florets
- 1 large bell pepper (any color), thinly sliced
- 1 cup carrots, julienned or thinly sliced
- 1 cup snap peas
- 1/2 yellow onion, thinly sliced
- 2 green onions, chopped (for garnish)
- 1 tsp sesame seeds (for garnish)
- Cooked rice or noodles, for serving
Instructions
- In a small bowl, whisk together the soy sauce, beef broth, brown sugar, rice vinegar, sesame oil, grated ginger, minced garlic, and cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat until shimmering. Add the sliced beef in a single layer and cook for 2-3 minutes per side, until browned. Do not overcrowd the pan; cook in batches if necessary. Remove the cooked beef from the pan and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the broccoli, bell pepper, carrots, snap peas, and yellow onion. Stir-fry for 4-6 minutes, until the vegetables are crisp-tender.
- Return the cooked beef to the skillet with the vegetables. Stir the prepared sauce again and pour it over the beef and vegetables. Cook, stirring constantly, for 1-2 minutes, or until the sauce thickens and coats everything nicely.
