Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 vanilla bean, split and scraped
  • 5 large egg yolks
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a medium saucepan, combine the milk, cream, and sugar over medium heat.
  2. Stir until the sugar is dissolved and the mixture is heated through.
  3. Remove from heat and add the vanilla bean seeds and pod.
  4. Let the mixture steep for 30 minutes.
  5. In a separate bowl, whisk the egg yolks until they are pale and thick.
  6. Slowly pour the warm milk mixture into the egg yolks, whisking constantly to temper the yolks.
  7. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
