- 2 tbsp vegetable oil, divided
- 1 head broccoli, cut into small florets
- 1 red bell pepper, thinly sliced
- 1 cup snap peas
- 1 medium carrot, peeled and thinly sliced or julienned
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/2 cup beef broth
- 1/4 cup soy sauce (for sauce)
- 2 tbsp brown sugar
- 1 tbsp cornstarch (for sauce)
- 1 tsp sesame oil
- Cooked rice, for serving
Instructions
- In a medium bowl, combine the thinly sliced beef with 1 tablespoon of cornstarch and 1 tablespoon of soy sauce. Toss to coat and set aside for 10 minutes.
- In a small bowl, whisk together the beef broth, 1/4 cup soy sauce, brown sugar, 1 tablespoon cornstarch, and sesame oil for the stir-fry sauce. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat until shimmering. Add the marinated beef in a single layer and cook for 2-3 minutes per side until browned and cooked through. Remove the beef from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the same skillet. Add the broccoli, red bell pepper, snap peas, and carrot. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
- Add the minced garlic and grated ginger to the vegetables and stir-fry for another 30 seconds until fragrant.
- Return the cooked beef to the skillet with the vegetables. Give the prepared stir-fry sauce a quick whisk, then pour it over the beef and vegetables.
