Instructions

  1. Muddle the Mint and Pineapple: In a sturdy cocktail shaker, gently muddle the mint leaves and pineapple chunks. Aim for about 5-7 gentle presses.
  2. Add Remaining Ingredients (Except Soda Water): Pour in the white rum, fresh lime juice, simple syrup, and pineapple juice into the shaker.
  3. Add Ice: Fill the cocktail shaker with ice cubes (about two-thirds full).
  4. Shake Vigorously: Seal the shaker tightly and shake vigorously for about 15-20 seconds.
  5. Double Strain into a Glass: Place a Hawthorne strainer over the shaker, then hold a fine-mesh strainer underneath as you pour the cocktail into your serving glass.
  6. Top with Soda Water: Fill the remainder of the glass with soda water.
  7. Garnish and Serve: Garnish with a fresh mint sprig and a pineapple wedge.
