A tropical twist on the classic Mojito, blending white rum, lime, mint, and pineapple for a refreshing summer cocktail.

- 60ml White Rum
- 30ml Fresh Lime Juice
- 15ml Simple Syrup (or to taste)
- 6–8 Mint Leaves
- 60ml Pineapple Juice
- 4–5 Chunks of Fresh Pineapple
- Soda Water, to top
- Ice Cubes
- Mint sprig and Pineapple wedge, for garnish
Instructions
- Muddle the Mint and Pineapple: In a sturdy cocktail shaker, gently muddle the mint leaves and pineapple chunks. Aim for about 5-7 gentle presses.
- Add Remaining Ingredients (Except Soda Water): Pour in the white rum, fresh lime juice, simple syrup, and pineapple juice into the shaker.
- Add Ice: Fill the cocktail shaker with ice cubes (about two-thirds full).
- Shake Vigorously: Seal the shaker tightly and shake vigorously for about 15-20 seconds.
- Double Strain into a Glass: Place a Hawthorne strainer over the shaker, then hold a fine-mesh strainer underneath as you pour the cocktail into your serving glass.
- Top with Soda Water: Fill the remainder of the glass with soda water.
- Garnish and Serve: Garnish with a fresh mint sprig and a pineapple wedge.
Notes
- Muddling: Be gentle when muddling the mint and pineapple. Over-muddling can make the mint taste bitter.
- Lime Juice: Fresh lime juice is essential for the best flavor.
- Double Straining: Double straining removes small bits of muddled ingredients for a smoother drink.
- Simple Syrup: Adjust the amount of simple syrup to your taste.
- Variations:
- Spice it Up: Add a thin slice of jalapeño to the muddling process.
- Sweeten it Up: Use agave nectar or honey instead of simple syrup.
- Use Different Rum: A light gold rum would also work well.
