  • 2 tablespoons finely chopped fresh dill
  • 1 large egg, lightly beaten
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil, for cooking
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 cup chopped fresh basil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Lemon wedges
  • Tzatziki sauce
  • Fresh dill sprigs

Instructions

  1. Chop the Salmon: Finely chop the salmon fillet.
  2. Combine Ingredients (Patties): In a large bowl, gently combine the chopped salmon, panko breadcrumbs, red onion, parsley, dill, egg, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Do not overmix.
  3. Form Patties: Gently form the salmon mixture into 4-6 patties. Place on a plate or baking sheet lined with parchment paper.
  4. Chill Patties (Optional): Cover and refrigerate for at least 30 minutes to firm up.
  5. Heat Olive Oil: Heat olive oil in a large skillet over medium heat.
  6. Cook Patties: Carefully place the salmon patties in the hot skillet, being careful not to overcrowd the pan. Cook for about 4-5 minutes per side, or until golden brown and cooked through (internal temperature reaches 145°F/63°C).
  7. Remove and Drain: Remove from skillet and place on a plate lined with paper towels to drain excess oil.
  8. Combine Ingredients (Topping): In a medium bowl, combine the halved cherry tomatoes, Kalamata olives, crumbled feta cheese, olive oil, lemon juice, chopped fresh basil, and minced garlic.
  9. Season Topping: Season the Mediterranean topping with salt and pepper to taste.
  10. Mix Gently: Gently toss all the ingredients together to ensure they are well combined.
  11. Let it Sit (Optional): For the best flavor, let the Mediterranean topping sit for about 15-20 minutes before serving.
  12. Top the Patties: Place the cooked salmon patties on a serving plate and spoon the Mediterranean topping over each patty.
  13. Garnish (Optional): Garnish with lemon wedges, tzatziki sauce, and fresh dill sprigs, if desired.

Notes

  • Fresh salmon fillet is preferred, but canned salmon (drained) can be substituted.
