- 1 tablespoon lemon juice
- 1/4 cup chopped fresh basil
- 1 clove garlic, minced
- Salt and pepper to taste

Instructions
- Chop the Salmon: Finely chop the salmon fillet.
- Combine Ingredients (Patties): In a large bowl, gently combine the chopped salmon, panko breadcrumbs, red onion, parsley, dill, egg, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Do not overmix.
- Form Patties: Gently form the salmon mixture into 4-6 patties. Place on a plate or baking sheet lined with parchment paper.
- Chill Patties (Optional): Cover and refrigerate for at least 30 minutes to firm up.
- Heat Olive Oil: Heat olive oil in a large skillet over medium heat.
- Cook Patties: Carefully place the salmon patties in the hot skillet, being careful not to overcrowd the pan. Cook for about 4-5 minutes per side, or until golden brown and cooked through (internal temperature reaches 145°F/63°C).
- Remove and Drain: Remove from skillet and place on a plate lined with paper towels to drain excess oil.
- Combine Ingredients (Topping): In a medium bowl, combine the halved cherry tomatoes, Kalamata olives, crumbled feta cheese, olive oil, lemon juice, chopped fresh basil, and minced garlic.
- Season Topping: Season the Mediterranean topping with salt and pepper to taste.
- Mix Gently: Gently toss all the ingredients together to ensure they are well combined.
- Let it Sit (Optional): For the best flavor, let the Mediterranean topping sit for about 15-20 minutes before serving.
- Top the Patties: Place the cooked salmon patties on a serving plate and spoon the Mediterranean topping over each patty.
- Garnish (Optional): Garnish with lemon wedges, tzatziki sauce, and fresh dill sprigs, if desired.
- Serve Immediately: Serve the Mediterranean salmon patties immediately while they are still warm.
Notes
- Fresh salmon fillet is preferred, but canned salmon (drained) can be substituted.
- Panko breadcrumbs give a lighter, crispier texture, but regular breadcrumbs can be used.
- Experiment with other herbs like oregano, thyme, or chives.
- Add a pinch of red pepper flakes for heat.
- Add finely chopped zucchini, bell peppers, or spinach to the patties.
- Grill patties for 4-5 minutes per side, oiling the grates to prevent sticking.
- Air fry at 400°F (200°C) for 8-10 minutes, spraying with olive oil.
- Prepare patties up to 24 hours in advance, covered in the refrigerator.
- Freeze cooked patties on a baking sheet, then transfer to a freezer bag for up to 2 months. Reheat by thawing and baking, pan-frying, or air frying.
