Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon (divided)
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream or plain Greek yogurt
- 1 teaspoon vanilla extract
- 2 medium apples (like Granny Smith or Honeycrisp), peeled, cored, and diced
- 1 tablespoon granulated sugar (for apples)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of ground cinnamon. Set aside.
- In a large bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the sour cream (or yogurt) and vanilla extract until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Do not overmix.
- In a separate small bowl, toss the diced apples with the remaining 1 tablespoon of granulated sugar and 1/2 teaspoon of ground cinnamon.
- Gently fold the cinnamon-sugar coated apples into the batter.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, you can loosely tent it with aluminum foil.
- Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
