This Winter Fruit Salad combines fresh spinach, pomegranate seeds, apples, pears, oranges, and kiwis, topped with crunchy nuts and a sweet-tangy honey-lemon dressing. It’s a nutritious and refreshing dish, perfect as a side or light meal during the colder months.

- 2 cups of fresh spinach leaves
- 1 cup of pomegranate seeds
- 1 cup of diced apples (preferably Granny Smith)
- 1 cup of diced pears (Bartlett or Anjou)
- 1 cup of sliced oranges (navel oranges)
- 1 cup of sliced kiwis
- 1/2 cup of walnuts or pecans, chopped
- 1/2 cup of feta cheese, crumbled (optional)
- 1/4 cup of honey or maple syrup
- 2 tablespoons of lemon juice
- 1 teaspoon of cinnamon
- Fresh mint leaves for garnish (optional)
Instructions
- Wash the Spinach: Rinse the fresh spinach leaves under cold water and use a salad spinner to remove excess water.
- Prepare the Apples and Pears: Core and dice the apples and pears into bite-sized pieces, leaving the skin on for added texture. Place them in a large mixing bowl.
- Slice the Oranges: Peel and slice the oranges into rounds or segments. Add them to the bowl with the apples and pears.
- Dice the Kiwis: Peel and slice the kiwis into rounds or half-moons, then add them to the mixing bowl.
- Add Pomegranate Seeds: If using fresh pomegranate, cut it in half and gently tap the back to release the seeds. If using pre-packaged seeds, add them directly to the bowl.
- Combine Honey and Lemon Juice: In a small bowl, whisk together the honey (or maple syrup) and lemon juice to create a sweet and tangy dressing.
- Add Cinnamon: Sprinkle in the cinnamon and mix well.
- Combine the Fruits and Dressing: Pour the honey-lemon dressing over the mixed fruits and gently toss everything together.
- Add Nuts and Cheese: Sprinkle the chopped walnuts or pecans over the salad, and if desired, add the crumbled feta cheese. Gently fold them into the salad.
- Taste and Adjust: Taste the salad and adjust sweetness or acidity as needed with more honey or lemon juice.
- Garnish with Mint: Tear fresh mint leaves and sprinkle them over the top for added freshness.
- Chill Before Serving: Let the salad chill in the refrigerator for about 30 minutes to meld the flavors.
- Serve: Give the salad a gentle toss before serving in a large bowl or individual plates.
