- 1 large head of cauliflower
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 tablespoon lemon juice
- Fresh herbs for garnish (such as parsley or cilantro)
- Optional: 1/4 cup grated Parmesan cheese or nutritional yeast for a vegan option
Instructions
- Preheat your oven to 425°F (220°C).
- Remove the leaves from the base of the cauliflower, keeping the stem intact.
- Rinse the cauliflower under cold water and pat it dry with a clean towel.
- In a small bowl, whisk together olive oil, salt, black pepper, garlic powder, smoked paprika, ground cumin, and lemon juice to create a marinade.
- Place the cauliflower head upside down in a bowl or on a plate. Pour half of the marinade over it, ensuring even coverage.
- Flip the cauliflower right side up and pour the remaining marinade over the top, spreading it into the crevices.
- If using, sprinkle Parmesan cheese or nutritional yeast over the top.
- Line a baking sheet with parchment paper or foil and place the marinated cauliflower upright in the center.
- Roast in the preheated oven for about 30 minutes. After 30 minutes, baste with any remaining marinade.
- Return to the oven and roast for an additional 15-20 minutes, until golden brown and tender.
- Monitor closely during the last few minutes to prevent burning; cover loosely with foil if browning too quickly.
- Once roasted, let cool for a few minutes before transferring to a serving platter.
- Drizzle with extra olive oil or lemon juice if desired, and garnish with fresh herbs.
- Cut into wedges or florets to serve.
