- 1 (20 oz) can of crushed pineapple, undrained
- 1 cup of mini marshmallows
- 1 cup of sweetened shredded coconut
- 1 cup of chopped pecans or walnuts (optional)
- 1 (8 oz) container of whipped topping (like Cool Whip)
- 1 teaspoon of vanilla extract
Instructions
- In a large mixing bowl, combine the instant pistachio pudding mix and the undrained crushed pineapple. Mix well until the pudding mix is fully dissolved and the mixture is smooth.
- Add in the mini marshmallows and gently fold them into the pudding and pineapple mixture.

- Add the container of whipped topping to the bowl with the pudding mixture.
- Gently fold the whipped topping into the mixture, being careful not to deflate it.
- Add the teaspoon of vanilla extract and stir gently to incorporate.
- Cover the bowl with plastic wrap or transfer the salad to an airtight container.
- Refrigerate for at least 2 hours, or overnight for best results.
- When ready to serve, give the salad a gentle stir to fluff it up.
- Scoop the salad into individual serving bowls or onto a serving platter.
