- 1 box yellow cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 package (3.4 oz) instant pistachio pudding mix
- 1 cup chopped pecans
- 1 cup whipped topping
- 1/2 cup powdered sugar
- 1/2 cup milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cake mix, eggs, and soda.
- Mix until well combined and pour into a greased 9×13 inch baking pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely.
- In a separate bowl, mix together the pudding mix and milk until smooth.
- Fold in the whipped topping until well combined.
- Spread the pudding mixture over the cooled cake.
- Top with chopped pecans and coconut, if desired.
- Refrigerate for at least 2 hours before serving.
