Ingredients
Scale
- 8 ounces elbow macaroni
- 2 cups fresh broccoli florets
- 1 cup Velveeta cheese, cubed
- 1 cup shredded sharp cheddar cheese
- 2 cups milk
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional, for garnish)
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the elbow macaroni and cook according to package instructions (8-10 minutes) until al dente, stirring occasionally.
- About 3 minutes before the macaroni is done, add the fresh broccoli florets to the pot to blanch them.
- Drain the macaroni and broccoli in a colander and shake off excess water.
- In the same pot, melt the butter over medium heat.
- Sprinkle in the flour and whisk continuously for 1-2 minutes to create a roux.
- Gradually pour in the milk while whisking to avoid lumps, cooking until the mixture thickens (3-5 minutes).
- Reduce heat to low and add the Velveeta and cheddar cheese, stirring until melted and creamy.
- Season with garlic powder, onion powder, salt, and black pepper. Adjust seasoning to taste.
- Add the drained macaroni and broccoli back into the pot with the cheese sauce.
- Gently fold until everything is well coated. Add a splash of milk for extra creaminess if desired.
- Preheat the oven to 350°F (175°C) if baking.
- Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
- In a small bowl, mix breadcrumbs with a tablespoon of melted butter and sprinkle over the top.
- Bake for 20-25 minutes until the top is golden brown and crispy.
- Let the dish sit for 5 minutes before serving.
- Serve warm and enjoy! Pair with a side salad or garlic bread for a complete meal.
