  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well blended.
  2. In a separate bowl, whisk together the whole milk, eggs, vanilla extract, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients. Using a spatula or wooden spoon, gently mix until just combined. Be careful not to overmix; a few lumps are okay.
  4. Once the dough comes together, cover the bowl with plastic wrap or a clean kitchen towel. Let it rest for about 30 minutes at room temperature.
  5. While the dough is resting, prepare your frying station. In a deep, heavy-bottomed pot or a deep fryer, pour enough vegetable oil to fill it about 2-3 inches deep.
  6. Heat the oil over medium heat until it reaches 350°F (175°C). You can use a candy thermometer to check the temperature.
  7. Prepare a plate lined with paper towels to drain the fried beignets.
  8. Once the oil is hot and the dough has rested, use a spoon or a small ice cream scoop to drop spoonfuls of dough into the hot oil.
  9. Fry the beignets for about 2-3 minutes on each side, or until they are golden brown.
  10. Once golden brown, carefully remove the beignets from the oil and place them on the prepared plate lined with paper towels to drain any excess oil.
  11. Continue frying the remaining dough until all beignets are cooked. Adjust the heat as necessary to maintain the oil temperature.
  12. Once all the beignets are fried and drained, place them in a large bowl or on a serving platter.
  13. Generously dust the warm beignets with powdered sugar.
  14. For an extra touch, you can also drizzle a little melted chocolate or caramel sauce over the top, or serve with a side of fruit preserves or whipped cream for dipping.

  • Make sure your oil is at the right temperature before frying. If the oil is too hot, the beignets will brown too quickly and remain raw inside. If it’s too cool, they will absorb too much oil and become greasy.
