- 1 (32 ounce) bag frozen tater tots
- 1 tablespoon olive oil
- 1/2 pound breakfast sausage, removed from casing
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper (any color)
- 6 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- Optional toppings: chopped green onions, sour cream, salsa, hot sauce, avocado slices
Instructions
- Preparing the Tater Tots: Preheat oven to 400°F (200°C). Spread frozen tater tots in a single layer on a large baking sheet. Drizzle with olive oil. Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
- Cooking the Sausage and Vegetables: While tater tots are baking, cook breakfast sausage in a large skillet over medium heat, breaking it up. Cook until browned and cooked through. Drain off excess grease. Add chopped onion and bell pepper. Cook until vegetables are softened, about 5-7 minutes. Season with salt and pepper to taste. Remove from heat.
- Preparing the Egg Mixture: In a large bowl, whisk together eggs and milk until well combined. Season with salt and pepper to taste.
- Assembling the Breakfast Bowl: Grease a 9×13 inch baking dish. Spread cooked tater tots evenly in the bottom. Sprinkle half of the cheddar cheese and half of the Monterey Jack cheese over the tater tots. Spread the cooked sausage and vegetable mixture evenly over the cheese layer. Pour the egg mixture evenly over the sausage and vegetable mixture. Sprinkle the remaining cheddar cheese and Monterey Jack cheese over the egg mixture.
- Baking the Breakfast Bowl: Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the cheese is melted and bubbly. If the top starts to brown too quickly, loosely cover with aluminum foil. Remove from oven and let cool for a few minutes before serving.
- Serving and Enjoying: Cut into squares and serve warm. Offer a variety of toppings. Store leftovers in the refrigerator in an airtight container. Reheat in the microwave or oven.
