- 1 pound ground beef (or turkey for a lighter option)
- 1 packet taco seasoning (about 1 ounce)
- 1 cup shredded cheddar cheese
- 1 cup cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup ranch dressing
- 1 cup diced tomatoes (fresh or canned, drained)
- 1/2 cup sliced black olives (optional)
- 1/4 cup chopped green onions
- 1 package of mini phyllo pastry cups (about 15–20 cups)
- Fresh cilantro for garnish (optional)
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).
- Drain any excess fat to keep the bites from becoming greasy.
- Add the taco seasoning and 2/3 cup of water to the skillet. Stir well and let it simmer for about 5 minutes, or until thickened. Adjust seasoning with salt and pepper if needed. Remove from heat and let cool slightly.
- In a medium mixing bowl, combine softened cream cheese, sour cream, and ranch dressing. Blend until smooth and creamy.
- Fold in shredded cheddar cheese, diced tomatoes, black olives (if using), and chopped green onions until evenly distributed.
- Gently fold the slightly cooled taco meat into the creamy ranch mixture, being careful not to overmix.
- Taste and adjust seasoning if necessary, adding more ranch dressing or cheese if desired.
- Preheat your oven to 350°F (175°C).
- Place mini phyllo pastry cups on a baking sheet lined with parchment paper.
- Fill each phyllo cup with the taco ranch mixture using a small spoon or piping bag, being careful not to overfill.
- Sprinkle extra cheddar cheese on top of each cup for added flavor.
- Bake in the preheated oven for about 15-20 minutes, or until the phyllo cups are golden brown and crispy, and the cheese is melted and bubbly.
- Keep an eye on them towards the end to prevent burning.
- Remove from the oven and let cool for a few minutes before serving.
- Garnish with fresh cilantro if desired, and serve warm. These bites are great for parties, game days, or family dinners!
- Serve with additional ranch dressing or salsa on the side for dipping.
