  • 1 cup spinach, fresh or frozen (thawed and drained)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1 tablespoon balsamic vinegar
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine ricotta cheese, grated Parmesan cheese, and chopped sun-dried tomatoes.
  3. Add minced garlic, dried oregano, and dried basil to the cheese mixture.
  4. If using fresh spinach, wash and chop it finely. If using frozen, ensure it’s thawed and drained. Add spinach to the cheese mixture and stir until well combined.
  5. Season the filling with salt and pepper to taste.
  6. Place the pork fillet on a clean cutting board and slice it lengthwise to create a pocket, being careful not to cut all the way through.
  7. Season the inside of the pocket with salt and pepper.
  8. Spoon the filling into the pocket of the pork fillet, being careful not to overstuff.
  9. Fold the fillet back over to enclose the filling and secure with toothpicks or kitchen twine if needed.
  10. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the stuffed pork fillet for 3-4 minutes on each side until golden brown.
  11. Remove from heat and pour chicken broth and balsamic vinegar around the pork in the skillet.
  12. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  13. Remove from the oven and let the pork rest for 5-10 minutes.
  14. Slice the stuffed pork fillet into 1-inch thick medallions.
  15. Arrange on a serving platter and drizzle with pan juices.
  16. Garnish with fresh basil leaves if desired.
  17. Serve with your choice of sides, such as roasted vegetables or a light salad.
