  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 avocado, sliced
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 cup red onion, diced (optional)

Instructions

  1. Season the chicken breasts by mixing chili powder, cumin, salt, and pepper in a small bowl. Rub the spice mixture all over the chicken.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts.
  3. Cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  4. Remove the chicken from the skillet and let it rest for 5 minutes before slicing into bite-sized pieces.
  5. If using fresh corn, grill or sauté it for a smoky flavor. For frozen corn, thaw it; for canned corn, drain and rinse.
  6. In the same skillet, add the corn and cook over medium heat for 5-7 minutes until heated through and slightly charred. Set aside.
  7. In a medium bowl, combine mayonnaise, lime juice, and smoked paprika (if using). Mix until smooth.
  8. Stir in half of the crumbled cotija cheese and half of the chopped cilantro.
  9. Place a scoop of cooked rice at the bottom of each bowl.
  10. Layer sliced chicken on top of the rice.
  11. Add sautéed corn over the chicken.
  12. Drizzle the creamy sauce over the chicken and corn.
  13. Top with remaining cotija cheese and cilantro. Optionally, add diced red onion and avocado slices.
  14. Serve immediately while warm, with extra lime wedges on the side.
  15. Store components separately in airtight containers in the fridge for up to 4 days for meal prep.
  16. Customize with black beans, jalapeños, or salsa for extra flavor.
