- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup corn (fresh, frozen, or canned)
- 1/2 cup mayonnaise
- 1/2 cup crumbled cotija cheese
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 avocado, sliced
- 1/2 teaspoon smoked paprika (optional)
- 1/4 cup red onion, diced (optional)
Instructions
- Season the chicken breasts by mixing chili powder, cumin, salt, and pepper in a small bowl. Rub the spice mixture all over the chicken.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts.
- Cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the skillet and let it rest for 5 minutes before slicing into bite-sized pieces.
- If using fresh corn, grill or sauté it for a smoky flavor. For frozen corn, thaw it; for canned corn, drain and rinse.
- In the same skillet, add the corn and cook over medium heat for 5-7 minutes until heated through and slightly charred. Set aside.
- In a medium bowl, combine mayonnaise, lime juice, and smoked paprika (if using). Mix until smooth.
- Stir in half of the crumbled cotija cheese and half of the chopped cilantro.
- Place a scoop of cooked rice at the bottom of each bowl.
- Layer sliced chicken on top of the rice.
- Add sautéed corn over the chicken.
- Drizzle the creamy sauce over the chicken and corn.
- Top with remaining cotija cheese and cilantro. Optionally, add diced red onion and avocado slices.
- Serve immediately while warm, with extra lime wedges on the side.
- Store components separately in airtight containers in the fridge for up to 4 days for meal prep.
- Customize with black beans, jalapeños, or salsa for extra flavor.
