Instructions
- Wash the strawberries thoroughly under cold running water to remove any dirt or pesticides.
- Gently pat them dry with a paper towel.
- Hull the strawberries by removing the green leafy tops, then slice them into halves or quarters.
- In a medium-sized mixing bowl, combine the sliced strawberries with the granulated sugar.
- Add the lemon juice and vanilla extract to the bowl.
- Gently toss the strawberries with the sugar, lemon juice, and vanilla until well coated.
- If you prefer a thicker topping, mix the cornstarch with the water to create a slurry.
- Pour the strawberry mixture into a small saucepan over medium heat and cook for about 5 minutes, stirring occasionally.
- Add the cornstarch slurry to the saucepan and stir continuously for 2-3 minutes until the mixture thickens.
- Remove from heat and let cool for a few minutes.
- Once the topping has cooled, place your cheesecake on a serving platter.
- Spoon the strawberry topping generously over the cheesecake, allowing some syrup to drizzle down the sides.
