Instructions

  1. Wash the strawberries thoroughly under cold running water to remove any dirt or pesticides.
  2. Gently pat them dry with a paper towel.
  3. Hull the strawberries by removing the green leafy tops, then slice them into halves or quarters.
  4. In a medium-sized mixing bowl, combine the sliced strawberries with the granulated sugar.
  5. Add the lemon juice and vanilla extract to the bowl.
  6. Gently toss the strawberries with the sugar, lemon juice, and vanilla until well coated.
  7. If you prefer a thicker topping, mix the cornstarch with the water to create a slurry.
  8. Pour the strawberry mixture into a small saucepan over medium heat and cook for about 5 minutes, stirring occasionally.
  9. Add the cornstarch slurry to the saucepan and stir continuously for 2-3 minutes until the mixture thickens.
  10. Remove from heat and let cool for a few minutes.
