- 2 teaspoons baking powder

- 1 large egg
- ½ cup buttermilk (or milk with 1 tablespoon vinegar added)

- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and chopped
- 1 orange, zested and juiced

Instructions
- Preheat your oven to 375°F (190°C).
- Line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well blended.
- In another bowl, beat the egg lightly, then add the buttermilk, vegetable oil, vanilla extract, orange juice, and orange zest. Whisk until fully combined.
- Pour the wet mixture into the dry ingredients and gently fold together with a spatula or wooden spoon, being careful not to overmix.
- Gently fold in the chopped strawberries and optional nuts until evenly distributed.
- Fill each muffin cup about ¾ full with the batter.
- Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
