Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup buttermilk (or milk with 1 tablespoon vinegar added)
  • ? cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and chopped
  • 1 orange, zested and juiced
  • Optional: ¼ cup chopped walnuts or pecans for added crunch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well blended.
  4. In another bowl, beat the egg lightly, then add the buttermilk, vegetable oil, vanilla extract, orange juice, and orange zest. Whisk until fully combined.
  5. Pour the wet mixture into the dry ingredients and gently fold together with a spatula or wooden spoon, being careful not to overmix.
  6. Gently fold in the chopped strawberries and optional nuts until evenly distributed.
  7. Fill each muffin cup about ¾ full with the batter.
  8. Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  10. Enjoy the muffins warm or at room temperature, plain or with butter/honey.
  11. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
  12. Substitute strawberries with blueberries or raspberries, or add a teaspoon of cinnamon for a different flavor.
  13. Pair with coffee or tea for a delightful treat.
  14. Consider making a double batch to share with friends or family.
  15. Top with a simple glaze made from powdered sugar and orange juice for extra sweetness.

Notes

  • For a healthier option, replace half of the all-purpose flour with whole wheat flour.
  • Feel free to experiment with different fruits or spices to customize your muffins.
