- 1 pound fresh strawberries, hulled and quartered
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 1/4 cup water (optional, if needed for blending)
- 2 teaspoons high-quality matcha powder
- 2 tablespoons hot water (not boiling, around 175°F/80°C)
- 1 cup milk of your choice (dairy or non-dairy, such as oat, almond, or soy)
- 1–2 tablespoons sweetener of your choice (maple syrup, agave, honey, or simple syrup), adjust to taste
- Ice cubes
- Fresh strawberries, sliced
- Matcha powder, for dusting
- Whipped cream (dairy or non-dairy)
Instructions
- Combine Ingredients: In a medium saucepan, combine the quartered strawberries, granulated sugar, and lemon juice.
- Cook the Strawberries: Place the saucepan over medium heat. As the strawberries heat up, they will release their juices. Stir occasionally to prevent sticking.
- Simmer: Bring the mixture to a gentle simmer. Reduce the heat to low and continue to simmer for about 10-15 minutes, or until the strawberries are softened and have broken down. Stir occasionally. You’ll notice the mixture thickening slightly.
- Blend the Puree: Remove the saucepan from the heat and let the strawberry mixture cool slightly for a few minutes. Transfer the mixture to a blender or food processor. If you prefer a smoother puree, you can use an immersion blender directly in the saucepan.
- Blend Until Smooth: Blend the strawberry mixture until it is completely smooth. If the puree is too thick, add a tablespoon or two of water at a time until you reach your desired consistency. Be careful not to add too much water, as you want the puree to be flavorful and concentrated.
- Strain (Optional): For an extra smooth puree, you can strain it through a fine-mesh sieve to remove any seeds. This step is optional but recommended if you prefer a very refined texture. Place the sieve over a bowl and pour the puree into the sieve. Use a spoon or spatula to press the puree through the sieve, leaving the seeds behind.
- Cool and Store: Transfer the strawberry puree to an airtight container and let it cool completely. Store the puree in the refrigerator for up to 5 days. You can also freeze the puree for longer storage (up to 2 months). If freezing, portion the puree into ice cube trays for easy use later.
- Sift the Matcha: This is a crucial step to avoid clumps! Sift the matcha powder through a fine-mesh sieve into a small bowl. This will ensure a smooth and lump-free matcha concentrate.
- Add Hot Water: Add the hot water (around 175°F/80°C) to the sifted matcha powder. It’s important that the water isn’t boiling, as boiling water can make the matcha taste bitter.
- Whisk the Matcha: Use a bamboo whisk (chasen) or a small whisk to whisk the matcha and water together vigorously. Whisk in a “W” or “M” shape until the matcha is fully dissolved and a frothy layer forms on top. The mixture should be a vibrant green color and free of any lumps. If you don’t have a bamboo whisk, a small regular whisk will work, but it may take a bit more effort to get a smooth consistency.
- Set Aside: Set the matcha concentrate aside while you prepare the rest of the latte.
- Prepare the Glass: Fill a tall glass with ice cubes. The amount of ice will depend on your preference, but aim to fill the glass about halfway.
- Add Strawberry Puree: Pour the strawberry puree into the glass over the ice. The amount of puree you use will depend on your preference for strawberry flavor. I usually use about 1/4 to 1/3 cup of puree per latte, but you can adjust this to your liking.
- Add Sweetener (Optional): If you prefer a sweeter latte, add your sweetener of choice (maple syrup, agave, honey, or simple syrup) to the glass. The amount of sweetener will depend on your preference and the sweetness of your strawberry puree. Start with 1 tablespoon and adjust to taste.
- Pour in the Milk: Gently pour the milk of your choice (dairy or non-dairy) into the glass over the strawberry puree and ice. Leave about an inch of space at the top of the glass for the matcha concentrate.
- Pour in the Matcha Concentrate: Slowly pour the prepared matcha concentrate over the milk. Try to pour it gently so that it creates a distinct layer on top of the milk. This will create a beautiful layered effect in your latte.
- Stir (Optional): If you prefer a more blended latte, you can gently stir the ingredients together. However, if you want to maintain the layered effect, avoid stirring too much.
- Garnish (Optional): Garnish your Strawberry Matcha Latte with fresh strawberry slices, a dusting of matcha powder, or a dollop of whipped cream (dairy or non-dairy). These garnishes are optional but add a nice visual appeal and extra flavor.
- Serve Immediately: Serve your Strawberry Matcha Latte immediately and enjoy!
Notes
- Adjust Sweetness: The sweetness of this latte can be easily adjusted to your liking. If you prefer a less sweet latte, reduce the amount of sugar in the strawberry puree and the amount of sweetener you add to the latte. If you prefer a sweeter latte, increase the amount of sugar and sweetener.
- Use Frozen Strawberries: If fresh strawberries are not in season or readily available, you can use frozen strawberries to make the puree. Thaw the frozen strawberries slightly before using them.
- Make it Vegan: To make this latte vegan, use non-dairy milk (such as oat, almond, or soy milk) and a vegan sweetener (such as maple syrup or agave). You can also use non-dairy whipped cream for the garnish.
- Add a Boost of Flavor: For an extra boost of flavor, you can add a pinch of vanilla extract or a dash of cinnamon to the strawberry puree.
- Experiment with Different Milks: Try using different types of milk to see which one you prefer. Oat milk is a popular choice for lattes because it is creamy and has a neutral flavor. Almond milk is another good option, but it has a slightly nutty flavor.
- Make it Iced or Hot: While this recipe is for an iced latte, you can easily make it hot by heating the milk and matcha concentrate before combining them with the strawberry puree.
- Strawberry Matcha Smoothie: Blend all the ingredients with additional ice for a refreshing smoothie.
