Strawberry Matcha Boba: A Delicious & Easy Recipe

Ingredients

  • 1/2 cup tapioca starch, plus extra for dusting
  • 1/4 cup boiling water
  • 2 tablespoons brown sugar
  • 1/4 cup hot water
  • 2 tablespoons matcha powder (high quality culinary grade)
  • 1/4 cup granulated sugar
  • 1 pound fresh strawberries, hulled
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 2 cups milk (dairy or non-dairy, your choice!)
  • Ice cubes
  • Fresh strawberries, sliced
  • Whipped cream
  • Matcha powder, for dusting

Instructions

  1. In a heat-safe bowl, combine the tapioca starch and brown sugar. Slowly pour in the boiling water while stirring constantly with a fork or spatula. The mixture will start to come together into a sticky dough.
  2. Once the dough is cool enough to handle (but still warm!), turn it out onto a lightly tapioca-floured surface. Knead the dough for about 5-7 minutes until it forms a smooth, pliable ball. If the dough is too dry, add a tiny bit of water, a teaspoon at a time. If it’s too sticky, add a little more tapioca starch. The consistency should be similar to playdough.
  3. Pinch off small pieces of dough, about 1/4 teaspoon each. Roll each piece into a small ball, about 1/4 inch in diameter. Keep the formed boba covered with a damp cloth or plastic wrap to prevent them from drying out. Dust them lightly with tapioca starch to prevent sticking. You can also use a boba shaping machine if you have one.
  4. Bring a large pot of water to a rolling boil. Gently add the boba pearls to the boiling water. Be careful not to overcrowd the pot. Once the boba floats to the surface, cook for 15-20 minutes, stirring occasionally to prevent sticking.
  5. After cooking, remove the pot from the heat, cover, and let the boba rest in the hot water for another 15-20 minutes. This helps them become perfectly chewy.
  6. Drain the boba and rinse them under cold water to stop the cooking process and remove excess starch. Transfer the boba to a bowl and add a simple syrup (equal parts sugar and water, heated until the sugar dissolves) or more brown sugar to sweeten them. Let them soak in the syrup for at least 30 minutes before using. This will prevent them from sticking together and keep them nice and sweet.
  7. In a small bowl, whisk together the hot water and matcha powder until the matcha is completely dissolved and there are no clumps.
  8. Add the granulated sugar to the matcha mixture and whisk until the sugar is fully dissolved.
  9. Let the matcha syrup cool completely before using. You can store it in an airtight container in the refrigerator for up to a week.
  10. In a blender or food processor, combine the hulled strawberries, granulated sugar, and lemon juice.
  11. Blend until smooth.
  12. For a smoother puree, you can strain it through a fine-mesh sieve to remove the seeds. This is optional, but it does create a more refined texture.
  13. Refrigerate the strawberry puree for at least 30 minutes to allow the flavors to meld.
  14. Add a generous amount of boba pearls to the bottom of a tall glass. The amount is up to you, depending on how much boba you like!
  15. Pour a layer of strawberry puree over the boba. Again, adjust the amount to your preference.
  16. Fill the glass with ice cubes.
  17. Slowly pour the milk over the ice, leaving some space at the top.
  18. Drizzle the matcha syrup over the milk. You can adjust the amount to your liking, depending on how strong you want the matcha flavor to be.
  19. Gently stir the drink to combine the flavors. Be careful not to over-stir, as this can make the drink too diluted.
  20. Garnish with fresh strawberry slices, whipped cream, and a dusting of matcha powder, if desired.
