- 6 cups frozen strawberries
- 1 cup fresh lemon juice (about 6–8 lemons)
- 1 cup simple syrup (see instructions below, or use store-bought)
- 1 (750ml) bottle rosé wine, chilled
- Lemon slices, for garnish
- Fresh strawberries, for garnish
- Optional: 2 tablespoons vodka or gin for an extra kick
- 1 cup granulated sugar
- 1 cup water
Instructions
- Combine sugar and water: In a small saucepan, combine the granulated sugar and water.
- Heat and dissolve: Place the saucepan over medium heat. Stir constantly until the sugar is completely dissolved. This usually takes about 3-5 minutes.
- Simmer: Once the sugar is dissolved, bring the mixture to a simmer. Let it simmer for about 1 minute, then remove from heat.
- Cool completely: Allow the simple syrup to cool completely before using. You can speed this up by transferring it to a heat-safe bowl and placing it in the refrigerator. The syrup will thicken slightly as it cools.
- Store: Store any leftover simple syrup in an airtight container in the refrigerator for up to 2 weeks.
- Combine ingredients in a blender: In a high-powered blender, combine the frozen strawberries, fresh lemon juice, simple syrup (homemade or store-bought), and chilled rosé wine. If you’re adding vodka or gin, add it now.
- Blend until smooth: Blend the mixture until it is completely smooth. You may need to stop the blender occasionally to scrape down the sides with a spatula to ensure everything is fully incorporated. Be patient; frozen strawberries can take a bit to blend. Aim for a thick, slushy consistency. If the mixture is too thick, add a splash of rosé wine or water to help it blend. If it’s too thin, add a few more frozen strawberries.
- Taste and adjust: Taste the frosé and adjust the sweetness or tartness to your liking. If it’s not sweet enough, add a little more simple syrup. If it’s too sweet, add a squeeze of lemon juice.
- Freeze (optional, for a thicker consistency): For a thicker, more frozen consistency, transfer the frosé to a freezer-safe container and freeze for at least 1-2 hours, or up to 3 hours. Check it every 30 minutes and stir with a fork to break up any large ice crystals. This will help prevent it from becoming a solid block of ice. If you freeze it for longer than 3 hours, you may need to let it thaw slightly before serving.
- Serve immediately: Pour the strawberry lemonade frosé into glasses.
- Garnish: Garnish with lemon slices and fresh strawberries. You can also add a sprig of mint for a pop of color and freshness.
