  • Total Time: 260 minutes
  • Yield: 8 servings 1x

Description

A classic no-bake Strawberry Icebox Pie featuring a creamy filling, sweet strawberries, and a crunchy graham cracker crust. A quick and easy dessert!

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ? cup granulated sugar
  • 6 tablespoons (3 ounces) unsalted butter, melted
  • 1 (14 ounce) can sweetened condensed milk
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) container frozen whipped topping, thawed (like Cool Whip)
  • 1 pound fresh strawberries, hulled and sliced
  • Fresh strawberries, whole or sliced
  • Whipped cream
  • Chocolate shavings

Instructions

  1. Prepare the Graham Cracker Crust: In a medium bowl, combine graham cracker crumbs and sugar. Add melted butter and mix until evenly moistened. Press the mixture firmly into a 9-inch pie plate, covering the bottom and sides. Chill in the refrigerator for at least 30 minutes (or freezer for 15 minutes).
  2. Make the Creamy Filling: In a large bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add sweetened condensed milk and mix until well combined. Stir in vanilla extract. Gently fold in thawed whipped topping until just combined.
  3. Assemble the Pie: Arrange half of the sliced strawberries evenly over the bottom of the chilled crust. Pour the cream cheese filling over the strawberries. Arrange the remaining sliced strawberries on top of the filling.
  4. Chill and Serve: Cover the pie with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the filling to firm up.
  5. Garnish (Optional): Before serving, garnish with fresh strawberries, whipped cream, and chocolate shavings, if desired. Slice and serve cold.

Notes

  • Softened Cream Cheese is Key: Make sure your cream cheese is properly softened before beating it. This will prevent lumps and ensure a smooth filling.
  • Don’t Overmix: Be gentle when folding in the whipped topping to avoid deflating it.
  • Chill Thoroughly: Allow the pie to chill for at least 4 hours, or preferably overnight, for the best texture and flavor.
  • Fresh Strawberries are Best: Use fresh, ripe strawberries for the best flavor and texture.
  • Make Ahead: This pie can be made a day or two in advance, making it perfect for parties or gatherings.
  • Other Berries: You can substitute other berries, such as blueberries, raspberries, or blackberries, for the strawberries.
  • Chocolate Crust: Use chocolate graham crackers for a chocolatey twist on the crust.
  • Lemon Zest: Add lemon zest to the filling for a bright, citrusy flavor.
  • Different Toppings: Experiment with different toppings, such as chopped nuts, shredded coconut, or a drizzle of chocolate sauce.
  • Storage Instructions: Store leftover pie in the refrigerator, covered, for up to 3 days. The crust may soften slightly over time, but the pie will still be delicious.
