Crispy cinnamon sugar tortilla chips with creamy cheesecake dip and sweet strawberry topping create a fun dessert nacho experience.

Ingredients

Scale
  • 10 (6-inch) flour tortillas
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1 pound fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • Whipped cream
  • Chocolate shavings
  • Fresh mint leaves

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a small bowl, whisk together granulated sugar and ground cinnamon.
  3. Brush one side of each tortilla with melted butter.
  4. Sprinkle the cinnamon-sugar mixture over the buttered side of each tortilla, pressing gently to adhere.
  5. Stack the tortillas and cut each into 6-8 wedges.
  6. Arrange tortilla wedges in a single layer on the prepared baking sheets.
  7. Bake for 8-12 minutes, or until golden brown and crispy. Watch carefully to prevent burning.
  8. Cool completely on the baking sheets.
  9. Ensure cream cheese is softened to room temperature.
  10. In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  11. Gradually add the powdered sugar, beating on low speed until fully incorporated.
  12. Add the vanilla extract and beat until combined.
  13. Gradually add the heavy cream, one tablespoon at a time, beating on low speed until the dip reaches your desired consistency.
  14. Chill for at least 30 minutes before serving (optional).
  15. Wash, hull, and slice the strawberries.
  16. In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice.
  17. Gently toss and let the mixture sit at room temperature for 15-20 minutes, stirring occasionally.
  18. Arrange the cinnamon sugar chips on a large platter, overlapping slightly.
  19. Spoon or pipe the cheesecake dip over the chips.
  20. Spoon the strawberry topping over the cheesecake dip.
  21. Garnish with whipped cream, chocolate shavings, and fresh mint leaves (optional).
  22. Serve immediately.

Notes

  • For the best results, use softened cream cheese for the cheesecake dip to avoid lumps.
  • Watch the chips carefully while baking, as they can burn quickly.
  • Chilling the cheesecake dip allows the flavors to meld and the dip to firm up slightly.
  • Macerating the strawberries creates a delicious syrupy sauce.
  • Assemble the nachos just before serving to keep the chips crispy.
  • Adjust the amount of heavy cream in the cheesecake dip to reach your desired consistency.
