- 2 cups fresh strawberries, hulled and halved
- 2 cups fresh pineapple, diced
- 1 cup granulated sugar
- 1/4 cup water
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon (optional)
- 1/4 cup shredded coconut (optional, for garnish)
Instructions
- Wash the strawberries thoroughly under cold running water. Hull and halve them.
- If using a whole pineapple, cut off the top and bottom, peel the skin, remove the core, and dice the flesh into bite-sized pieces. If using pre-cut pineapple, measure out 2 cups.
- In a medium saucepan, combine sugar, water, lemon juice, and salt. Stir over medium heat until the sugar dissolves (3-5 minutes).
- Bring to a gentle boil and let it boil for 2-3 minutes without stirring to thicken slightly.
- Remove from heat and stir in vanilla extract and ground cinnamon (if using).
- In a large mixing bowl, combine strawberries and pineapple. Pour the warm syrup over the fruit and gently toss to coat without mashing the strawberries.
- Cover the bowl and let it sit at room temperature for 30 minutes to absorb flavors.
- Transfer the fruit and syrup to a large skillet. Heat over medium, stirring gently for 10-15 minutes until the syrup thickens and the fruit is tender. Add a splash of water if the syrup gets too thick.
- Serve warm or chill in the refrigerator for about an hour. Optionally, sprinkle shredded coconut on top before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Serve cold or gently reheat in the microwave.
