- 500 g Gnocchi
- 200 g frischer Spinat
- 50 g Parmesan, gerieben
- 30 g Pinienkerne
- 2 Knoblauchzehen
- 100 ml Olivenöl
- Salz und Pfeffer nach Geschmack
Instructions
- In a large pot, bring salted water to a boil.
- Add gnocchi to the boiling water and cook until they float to the surface.
- Drain the gnocchi and set aside.
- In a skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in the spinach and cook until wilted.
- Add the cooked gnocchi to the skillet and toss to combine.
- Stir in the pesto and cook for an additional 2-3 minutes.
- Serve hot, garnished with grated Parmesan cheese if desired.
