  • Author: Maria

Description

Enjoy a classic Southern Strawberry Cobbler with juicy strawberries baked in a buttery, fluffy batter. This delightful dessert is perfect for summer and pairs wonderfully with vanilla ice cream or whipped cream.

Ingredients

Scale
  • 4 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon (optional)
  • Vanilla ice cream or whipped cream for serving (optional)

Instructions

  1. Start by washing the strawberries thoroughly under cold water to remove any dirt or pesticides.
  2. Hull the strawberries by removing the green tops and slicing them in half or quarters, depending on their size.
  3. In a large mixing bowl, combine the sliced strawberries with 1/2 cup of granulated sugar, lemon juice, and vanilla extract. Gently toss until the strawberries are well coated. Let this mixture sit for about 15-20 minutes to release their juices.
  4. Preheat your oven to 350°F (175°C).
  5. In a separate mixing bowl, whisk together the flour, remaining 1/2 cup of granulated sugar, baking powder, salt, and ground cinnamon (if using).
  6. Pour in the whole milk and melted butter into the dry ingredients. Stir gently until just combined, being careful not to overmix.
  7. Pour the batter into a 9×13-inch baking dish and spread it out evenly.
  8. Spoon the macerated strawberries along with their juices over the batter without stirring.
  9. Optionally, sprinkle a little extra sugar on top of the strawberries for added sweetness.
  10. Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
  11. If the top is browning too quickly, cover it loosely with aluminum foil.
  12. Once done, remove from the oven and let it cool for about 10-15 minutes.
  13. Scoop out generous portions into bowls and top with vanilla ice cream or whipped cream if desired.
  14. Enjoy the warm cobbler while fresh! Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the microwave.

Notes

  • Feel free to mix in other berries like blueberries or raspberries for a mixed berry cobbler.
  • For a less sweet cobbler, reduce the sugar in the strawberry mixture to 1/3 cup.
  • For a rustic look, drop spoonfuls of the batter over the strawberries instead of pouring it all in one go.
