  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard (yellow or Dijon)
  • Salt and pepper to taste
  • 4 hoagie rolls
  • 8 slices provolone cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the chopped onion and green bell pepper. Sauté for about 5 minutes, or until the vegetables are softened and the onion is translucent.
  2. Add the minced garlic to the skillet and cook for an additional minute, stirring frequently to prevent burning.
  3. Add the ground beef to the skillet. Use a wooden spoon to break it up into smaller pieces. Cook until the beef is browned and no longer pink, about 7-10 minutes. Make sure to drain any excess fat if necessary.
  4. Once the beef is cooked, reduce the heat to low and stir in the ketchup, Worcestershire sauce, brown sugar, mustard, salt, and pepper. Mix everything together until well combined. Let the mixture simmer for about 10 minutes, stirring occasionally.
  5. While the sloppy joe mixture is simmering, preheat your oven to 350°F (175°C).
  6. Slice the hoagie rolls in half lengthwise, being careful not to cut all the way through. You want them to open like a book.
  7. Place the hoagie rolls on a baking sheet, cut side up. If you like, you can brush a little olive oil or melted butter on the cut sides for extra flavor and crispiness.
  8. Once the oven is preheated, place the baking sheet in the oven and toast the rolls for about 5-7 minutes, or until they are lightly golden and crispy.
  9. Remove the toasted hoagie rolls from the oven and let them cool slightly.
  10. Using a spoon, generously fill each hoagie roll with the sloppy joe mixture. Don’t be shy; pile it high!
