- 1 pound large shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 teaspoon sesame oil
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes (optional, for heat)
- Salt to taste
- Cooked rice or noodles, for serving
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- In a medium bowl, combine shrimp with 1 tablespoon soy sauce, 1 teaspoon black pepper, and a pinch of salt. Toss to coat and let marinate for 15-20 minutes.
- Slice the red, green, and yellow bell peppers into thin strips and slice the onion into thin wedges.
- Mince the garlic and ginger.
- Heat a large skillet or wok over medium-high heat and add 2 tablespoons of vegetable oil.
- Add the marinated shrimp in a single layer and cook for 2-3 minutes until pink and opaque. Flip and cook for another 1-2 minutes. Remove shrimp and set aside.
- In the same skillet, add more oil if needed and sauté the sliced onions for about 2 minutes until softened.
- Add minced garlic and ginger, stirring for about 30 seconds until fragrant.
- Add the sliced bell peppers and stir-fry for 3-4 minutes until tender-crisp.
- Return the shrimp to the skillet and stir to combine.
- In a small bowl, mix cornstarch with water to create a slurry.
- Add the remaining soy sauce, oyster sauce, sesame oil, and the cornstarch slurry to the skillet. Stir well.
- Cook for an additional 2-3 minutes until the sauce thickens and coats the shrimp and vegetables. Add red pepper flakes if desired.
- Taste and adjust seasoning with salt or additional soy sauce if needed.
- Remove from heat and serve over cooked rice or noodles.
- Garnish with chopped green onions or sesame seeds if desired.

- For added flavor, consider marinating the shrimp for longer if time allows.
- Feel free to substitute or add other vegetables like snap peas or broccoli for variety.
