- 2 cups of cooked jasmine rice
- 1 pound of shrimp, peeled and deveined
- 2 tablespoons of vegetable oil
- 2 large eggs, beaten
- 1 cup of mixed vegetables (peas, carrots, and corn)
- 3 green onions, chopped
- 3 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce (optional)
- 1 teaspoon of sesame oil
- Salt and pepper to taste
Instructions
- Cook the Rice: If you haven’t done so already, cook your jasmine rice according to package instructions. For the best fried rice, it’s ideal to use rice that has been cooked and cooled, preferably left in the fridge overnight.
- Prep the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels.
- Chop the Vegetables: Dice the mixed vegetables into small, uniform pieces.
- Mince the Garlic: Mince the garlic cloves finely.
- Chop the Green Onions: Slice the green onions, separating the white parts from the green tops.
- Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
- Cook the Shrimp: Add the shrimp to the hot oil in a single layer. Cook for about 2-3 minutes on one side until they turn pink and opaque. Flip and cook for another 1-2 minutes. Remove from skillet and set aside.
- Scramble the Eggs: In the same skillet, add a little more oil if necessary, and pour in the beaten eggs. Scramble until just set, then remove and set aside with the shrimp.
- Sauté the Aromatics: Add minced garlic and the white parts of the green onions to the skillet. Sauté for about 30 seconds until fragrant.
- Add the Vegetables: Toss in the mixed vegetables and stir-fry for about 2-3 minutes until tender but still crisp.
- Combine the Rice: Add the cooked rice to the skillet, breaking up any clumps. Stir to mix well.
- Season the Rice: Pour in the soy sauce and oyster sauce (if using). Stir to coat the rice evenly. Add sesame oil and season with salt and pepper to taste.
- Return the Shrimp and Eggs: Gently fold the cooked shrimp and scrambled eggs into the rice mixture. Cook for an additional 2-3 minutes to heat through.
- Final Touches: Remove from heat and sprinkle the green tops of the green onions over the fried rice.
- Serve: Transfer to a serving platter or individual bowls. Garnish with additional green onions or sesame seeds if desired.
