Description
A spicy and refreshing margarita with the sweetness of pineapple and a kick of serrano peppers for a unique, flavorful cocktail.

- 2 oz Tequila Blanco (good quality recommended)
- 1 oz Fresh Lime Juice (freshly squeezed)
- 1 oz Pineapple Juice (not from concentrate)
- 0.75 oz Agave Nectar (adjust to taste)
- 2–3 Serrano Pepper Slices (adjust to spice preference)
- Pineapple wedge, for garnish
- Lime wedge, for garnish
- Salt or Chili Lime Salt, for rimming (optional)
- Ice
- 1 cup Water
- 1 cup Granulated Sugar
- 1–2 Serrano Pepper Slices (adjust to spice preference)
Instructions
- Combine Water and Sugar: In a small saucepan, combine the water and sugar.
- Add Serrano: Add the serrano pepper slices to the saucepan.
- Heat and Dissolve: Heat the mixture over medium heat, stirring constantly, until the sugar is completely dissolved.
- Simmer: Once the sugar is dissolved, bring the mixture to a simmer and let it simmer for about 5 minutes. This will allow the serrano pepper to infuse its flavor into the syrup.
- Cool and Strain: Remove the saucepan from the heat and let the syrup cool completely. Once cooled, strain the syrup through a fine-mesh sieve to remove the serrano pepper slices.
- Store: Store the serrano simple syrup in an airtight container in the refrigerator for up to 2 weeks.
- Prepare the Glass (Optional): If desired, salt or chili-lime salt the rim of your glass. Run a lime wedge around the rim and dip into salt.
- Add Ingredients to Shaker: In a cocktail shaker, combine tequila, lime juice, pineapple juice, agave nectar (or serrano simple syrup), and serrano pepper slices (if not using syrup).
- Muddle (If Not Using Syrup): If not using the serrano simple syrup, gently muddle the serrano pepper slices in the shaker.
- Add Ice: Fill the cocktail shaker with ice.
- Shake Vigorously: Close the shaker tightly and shake vigorously for 15-20 seconds.
- Double Strain: Double strain the margarita into your prepared glass filled with ice.
- Garnish: Garnish with a pineapple wedge and a lime wedge.
- Adjust to Taste: Taste and adjust sweetness or spice as needed.

- Spice Level: Adjust the amount of serrano pepper to your preference.
- Sweetness: Adjust the amount of agave nectar or simple syrup to your liking.
- Tequila: Use a good quality tequila blanco for the best flavor.
- Simple Syrup: Making the simple syrup ahead of time is recommended.
- Double Strain: Double straining is recommended for a smoother drink.
- Make Ahead: The serrano simple syrup can be made up to 2 weeks in advance and stored in the refrigerator. You can juice the limes and pineapple a few hours in advance and store them in the refrigerator. You can salt the rims of the glasses a few hours in advance.
