  • 23 Serrano Pepper Slices (adjust to spice preference)
  • Pineapple wedge, for garnish
  • Lime wedge, for garnish
  • Salt or Chili Lime Salt, for rimming (optional)
  • Ice
  • 1 cup Water
  • 1 cup Granulated Sugar
  • 12 Serrano Pepper Slices (adjust to spice preference)

Instructions

  1. Combine Water and Sugar: In a small saucepan, combine the water and sugar.
  2. Add Serrano: Add the serrano pepper slices to the saucepan.
  3. Heat and Dissolve: Heat the mixture over medium heat, stirring constantly, until the sugar is completely dissolved.
  4. Simmer: Once the sugar is dissolved, bring the mixture to a simmer and let it simmer for about 5 minutes. This will allow the serrano pepper to infuse its flavor into the syrup.
  5. Cool and Strain: Remove the saucepan from the heat and let the syrup cool completely. Once cooled, strain the syrup through a fine-mesh sieve to remove the serrano pepper slices.
  6. Store: Store the serrano simple syrup in an airtight container in the refrigerator for up to 2 weeks.
  7. Prepare the Glass (Optional): If desired, salt or chili-lime salt the rim of your glass. Run a lime wedge around the rim and dip into salt.
  8. Add Ingredients to Shaker: In a cocktail shaker, combine tequila, lime juice, pineapple juice, agave nectar (or serrano simple syrup), and serrano pepper slices (if not using syrup).
  9. Muddle (If Not Using Syrup): If not using the serrano simple syrup, gently muddle the serrano pepper slices in the shaker.
  10. Add Ice: Fill the cocktail shaker with ice.
  11. Shake Vigorously: Close the shaker tightly and shake vigorously for 15-20 seconds.
  12. Double Strain: Double strain the margarita into your prepared glass filled with ice.
  13. Garnish: Garnish with a pineapple wedge and a lime wedge.
  14. Adjust to Taste: Taste and adjust sweetness or spice as needed.
