- 2 cups beef broth

- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup mushrooms, sliced (optional)
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the beef stew meat dry with paper towels. In a large bowl, combine flour, salt, and pepper. Toss the beef cubes in the flour mixture until evenly coated.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the beef cubes in batches until browned on all sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for an additional 1-2 minutes. If using, add mushrooms and cook for 5 minutes until tender.
- Return the seared beef to the skillet. Pour in beef broth and Worcestershire sauce, stirring to combine. Add thyme and rosemary, then bring to a gentle simmer.
- Cover and reduce heat to low, cooking for 1.5 to 2 hours, stirring occasionally.
- If desired, mix cornstarch with water to create a slurry. After 1.5 hours, stir the slurry into the skillet. Increase heat slightly and cook for an additional 5-10 minutes until gravy thickens.
- Taste and adjust seasoning with salt and pepper. Garnish with chopped parsley. Serve over mashed potatoes, rice, or egg noodles.
