Description

This sautéed spinach recipe is a quick and nutritious side dish featuring fresh garlic and a hint of lemon. Ready in just 20 minutes, it’s a vibrant addition to any meal, perfect for enhancing flavors with minimal effort.

Ingredients

Scale
  • 1 pound fresh spinach (washed and dried)
  • 2 tablespoons olive oil (or butter, if you prefer)
  • 3 cloves garlic (minced)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tablespoon lemon juice (optional, for brightness)
  • Pinch of red pepper flakes (optional, for heat)

Instructions

  1. Wash the Spinach: Rinse the fresh spinach under cold water and use a salad spinner or a clean kitchen towel to remove excess moisture.
  2. Trim the Stems: If necessary, trim off thick stems from the spinach. This step is optional for baby spinach.
  3. Heat the Oil: In a large skillet, heat the olive oil (or butter) over medium heat for about 1-2 minutes until it shimmers.
  4. Add Garlic: Add the minced garlic to the skillet and sauté for about 30 seconds, stirring frequently until fragrant and slightly golden.
  5. Add Spinach: Add the washed spinach to the skillet, stirring to coat it with the garlic and oil. If needed, add it in batches.
  6. Sauté the Spinach: Cook the spinach for about 2-4 minutes, stirring occasionally until it wilts down and becomes bright green and tender.
  7. Season: Season with salt and black pepper to taste. Add red pepper flakes if desired.
  8. Add Lemon Juice: Squeeze in a tablespoon of fresh lemon juice right before serving for added brightness.
  9. Plate the Spinach: Transfer the sautéed spinach to a serving dish and serve warm or at room temperature.
  10. Garnish (Optional): Garnish with grated Parmesan cheese or toasted pine nuts for added flavor and texture.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat, adding a splash of water or olive oil if needed.
  • Feel free to add other vegetables, proteins, or herbs to customize the dish to your liking.
