Instructions
- Start by juicing the lemons. Roll them on the countertop with your palm to soften, then cut in half and extract the juice using a citrus juicer or fork. Strain to remove seeds and pulp, yielding about 1 cup of fresh lemon juice.
- In a medium saucepan, combine the sugar and 1 cup of water. Heat over medium, stirring until the sugar dissolves (3-5 minutes). This creates a simple syrup.
- Remove from heat and let the syrup cool. It can be stored in the refrigerator for up to a week.
- In a large pitcher, combine the cooled simple syrup with the fresh lemon juice. Stir well.
