  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon juice (optional, for added brightness)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis into 1/2-inch rounds for even cooking.
  3. Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  4. In a large bowl, combine the sliced zucchini with olive oil, garlic powder, dried oregano, salt, and pepper. Toss until well-coated.
  5. Spread the seasoned zucchini in a single layer on the prepared baking sheet.
