  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 red bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Chop your choice of vegetables into bite-sized pieces.
  3. Toss the vegetables with olive oil, salt, and pepper.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized.
  6. While the vegetables are roasting, prepare your grain (quinoa, rice, etc.) according to package instructions.
  7. Once the vegetables are done, remove them from the oven and let them cool slightly.
  8. Assemble the bowl by placing the grain at the bottom, topped with the roasted vegetables.
  9. Add any additional toppings such as avocado, nuts, or dressing as desired.
  10. Serve warm and enjoy!
