Instructions

  1. Wash the purple sweet potato thoroughly under running water to remove any dirt.
  2. Peel the sweet potato using a vegetable peeler, being careful to remove only the skin.
  3. Cut the sweet potato into small cubes, about 1-inch in size.
  4. Place the cubed sweet potato in a pot and cover it with water. Bring it to a boil over medium-high heat.
  5. Once boiling, reduce the heat to medium and let it simmer for about 15-20 minutes, or until fork-tender.
  6. Drain the sweet potato and let it cool slightly before mashing it in a bowl until smooth.
  7. In a separate pot, bring 2 cups of water to a boil.
  8. Add 1 cup of tapioca pearls to the boiling water, stirring gently to prevent sticking.
  9. Cook the tapioca pearls according to package instructions (usually 15-20 minutes) until they become translucent and chewy.
  10. Remove from heat and let the pearls sit in the hot water for an additional 5 minutes.
  11. Drain the pearls and rinse them under cold water to stop the cooking process.
  12. (Optional) Soak the pearls in a mixture of 1/4 cup sugar and 1/2 cup water for about 10 minutes for added sweetness.
  13. In a blender, combine the mashed purple sweet potato, 2 cups of milk (or non-dairy alternative), 1/4 cup sugar, and 1/2 teaspoon of vanilla extract.
  14. Blend on high speed until smooth and creamy. Add more milk if the mixture is too thick.
