Ingredients
Scale
- 1 cup purple sweet potato, peeled and cubed
- 1 cup tapioca pearls
- 2 cups water (for cooking tapioca pearls)
- 2 cups milk (or non-dairy alternative like almond or oat milk)
- 1/4 cup sugar (adjust to taste)
- 1/2 teaspoon vanilla extract
- Ice cubes
- Optional: additional sweetener like honey or agave syrup
- Optional: whipped cream for topping
Instructions
- Wash the purple sweet potato thoroughly under running water to remove any dirt.
- Peel the sweet potato using a vegetable peeler, being careful to remove only the skin.
- Cut the sweet potato into small cubes, about 1-inch in size.
- Place the cubed sweet potato in a pot and cover it with water. Bring it to a boil over medium-high heat.
- Once boiling, reduce the heat to medium and let it simmer for about 15-20 minutes, or until fork-tender.
- Drain the sweet potato and let it cool slightly before mashing it in a bowl until smooth.
- In a separate pot, bring 2 cups of water to a boil.
- Add 1 cup of tapioca pearls to the boiling water, stirring gently to prevent sticking.
- Cook the tapioca pearls according to package instructions (usually 15-20 minutes) until they become translucent and chewy.
- Remove from heat and let the pearls sit in the hot water for an additional 5 minutes.
- Drain the pearls and rinse them under cold water to stop the cooking process.
- (Optional) Soak the pearls in a mixture of 1/4 cup sugar and 1/2 cup water for about 10 minutes for added sweetness.
- In a blender, combine the mashed purple sweet potato, 2 cups of milk (or non-dairy alternative), 1/4 cup sugar, and 1/2 teaspoon of vanilla extract.
- Blend on high speed until smooth and creamy. Add more milk if the mixture is too thick.
- Taste and adjust sweetness if necessary, adding more sugar or a drizzle of honey/agave syrup if desired.
- In a tall glass, add a generous amount of cooked tapioca pearls (about 1/4 to 1/3 cup).
- Fill the glass with ice cubes, leaving some space at the top for the sweet potato milk.
- Pour the purple sweet potato milk over the ice and tapioca pearls, filling the glass to the brim.
- (Optional) Top with whipped cream for an extra indulgent treat.
