- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 1/2 cups granulated sugar
- 1 cup packed brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 (15 ounce) can pumpkin puree
- 1 cup chopped walnuts or pecans (optional)
- 1/2 cup chocolate chips (optional)
Instructions
- Combine Dry Ingredients: In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- Mix Sugars and Oil: In a separate large bowl, combine the granulated sugar, brown sugar, and vegetable oil. Beat with an electric mixer until well combined.
- Add Eggs: Add the eggs one at a time, beating well after each addition.
- Incorporate Pumpkin Puree: Add the pumpkin puree to the wet ingredients and beat until smooth and evenly colored.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
- Add Nuts and Chocolate Chips (Optional): Gently fold in the nuts and/or chocolate chips, if using.
- Prepare Loaf Pans: Preheat oven to 350°F (175°C). Grease and flour two 9×5 inch loaf pans.
- Pour Batter: Divide the batter evenly between the prepared loaf pans.
- Bake: Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top is browning too quickly, tent with foil.
- Cool: Let the bread cool in the pans for 10 minutes before transferring it to a wire rack to cool completely.
