  • Total Time: 80 minutes
  • Yield: 2 loaves 1x

Description

Moist and flavorful pumpkin bread, perfect for fall! This classic recipe is easy to make and can be customized with nuts and chocolate chips.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 (15 ounce) can pumpkin puree
  • 1 cup chopped walnuts or pecans (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Combine Dry Ingredients: In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  2. Mix Sugars and Oil: In a separate large bowl, combine the granulated sugar, brown sugar, and vegetable oil. Beat with an electric mixer until well combined.
  3. Add Eggs: Add the eggs one at a time, beating well after each addition.
  4. Incorporate Pumpkin Puree: Add the pumpkin puree to the wet ingredients and beat until smooth and evenly colored.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  6. Add Nuts and Chocolate Chips (Optional): Gently fold in the nuts and/or chocolate chips, if using.
  7. Prepare Loaf Pans: Preheat oven to 350°F (175°C). Grease and flour two 9×5 inch loaf pans.
  8. Pour Batter: Divide the batter evenly between the prepared loaf pans.
  9. Bake: Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top is browning too quickly, tent with foil.
  10. Cool: Let the bread cool in the pans for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Don’t overmix the batter.
  • Use room temperature ingredients for best results.
  • Check for doneness with a wooden skewer.
  • Cool completely before slicing.
  • Adjust spices to taste.
  • Store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. Can also be frozen.
  • Get creative with variations: add different nuts, dried fruits, or a cream cheese swirl.
