Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with butter or non-stick cooking spray. Optionally, line the bottom with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg until well blended.
- In another bowl, whisk the melted butter, eggs, and vanilla extract until smooth.
- Stir the crushed pineapple into the wet mixture, ensuring it is well-drained.
- Pour the wet mixture into the dry ingredients and gently fold together with a spatula, being careful not to overmix.
- If using, fold in the chopped nuts and shredded coconut.
- Transfer the batter into the prepared loaf pan and smooth the top.
