Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the drained crushed pineapple and granulated sugar. Stir well.
- Add the all-purpose flour to the pineapple mixture and mix until fully incorporated.
- Fold in the shredded cheddar cheese.
- Pour in the melted butter and mix until well combined.
- In a separate bowl, combine the crushed Ritz crackers, chopped pecans (if using), ground cinnamon, and salt.
- Drizzle in about 2 tablespoons of melted butter and mix until the cracker mixture is evenly coated.
- Grease a 9×13 inch baking dish with butter or cooking spray.
- Spread the pineapple mixture evenly in the bottom of the prepared baking dish.
- Sprinkle the cracker topping evenly over the pineapple mixture.
