Ingredients

Scale
  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup unsalted butter, melted
  • 1 cup crushed Ritz crackers (about 1 sleeve)
  • 1/2 cup chopped pecans (optional)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained crushed pineapple and granulated sugar. Stir well.
  3. Add the all-purpose flour to the pineapple mixture and mix until fully incorporated.
  4. Fold in the shredded cheddar cheese.
  5. Pour in the melted butter and mix until well combined.
  6. In a separate bowl, combine the crushed Ritz crackers, chopped pecans (if using), ground cinnamon, and salt.
  7. Drizzle in about 2 tablespoons of melted butter and mix until the cracker mixture is evenly coated.
  8. Grease a 9×13 inch baking dish with butter or cooking spray.
  9. Spread the pineapple mixture evenly in the bottom of the prepared baking dish.
  10. Sprinkle the cracker topping evenly over the pineapple mixture.
  11. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the casserole is bubbly around the edges.
  12. Remove from the oven and let it cool for about 10 minutes before serving.

Notes

  • Ensure the crushed pineapple is well-drained to avoid a soggy casserole.
  • Adjust sugar to taste for a sweeter casserole. Experiment with different cheeses for unique flavors.
  • Omit pecans for a nut-free version. Add coconut for a tropical twist.
