- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1 package (3.4 oz) instant lemon pudding mix
- 2 cups cold milk
- 1 package (12 oz) lemon-flavored cookies (like Limoncello or Lemon Oreos)
- 1 cup fresh lemon juice (about 4–5 lemons)
- Zest of 2 lemons
- Fresh lemon slices and mint leaves for garnish (optional)
Instructions
- In a large mixing bowl, add the softened cream cheese. Using an electric mixer, beat it on medium speed until smooth and creamy, about 2 minutes.
- Gradually add the powdered sugar to the cream cheese, mixing until fully incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form, about 3-5 minutes on high speed.
- Gently fold the whipped cream into the cream cheese mixture using a spatula, being careful not to deflate the whipped cream.
- In another bowl, combine the instant lemon pudding mix with the cold milk. Whisk until thickened, about 2 minutes.
- Add the fresh lemon juice and lemon zest to the pudding mixture, stirring well to combine.
- Lay a single layer of lemon-flavored cookies at the bottom of a 9×13 inch baking dish.
- Spread half of the cream cheese mixture over the cookies, smoothing it out with a spatula.
- Pour half of the lemon pudding mixture over the cream cheese layer, spreading it evenly.
- Add another layer of cookies on top of the pudding.
- Spread the remaining cream cheese mixture over the cookies, followed by the rest of the lemon pudding mixture. Smooth everything out nicely.
- Top with a final layer of lemon cookies, gently pressing them down.
- Cover the baking dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, preferably overnight.
- Remove the lasagna from the refrigerator and take off the cover.
- Cut into squares using a sharp knife (dipping the knife in warm water helps for cleaner slices).
- Serve each square on a dessert plate, garnished with a fresh lemon slice and a sprig of mint.
