  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 package (3.4 oz) instant lemon pudding mix
  • 2 cups cold milk
  • 1 package (12 oz) lemon-flavored cookies (like Limoncello or Lemon Oreos)
  • 1 cup fresh lemon juice (about 45 lemons)
  • Zest of 2 lemons
  • Fresh lemon slices and mint leaves for garnish (optional)

Instructions

  1. In a large mixing bowl, add the softened cream cheese. Using an electric mixer, beat it on medium speed until smooth and creamy, about 2 minutes.
  2. Gradually add the powdered sugar to the cream cheese, mixing until fully incorporated.
  3. In a separate bowl, whip the heavy cream until stiff peaks form, about 3-5 minutes on high speed.
  4. Gently fold the whipped cream into the cream cheese mixture using a spatula, being careful not to deflate the whipped cream.
  5. In another bowl, combine the instant lemon pudding mix with the cold milk. Whisk until thickened, about 2 minutes.
  6. Add the fresh lemon juice and lemon zest to the pudding mixture, stirring well to combine.
  7. Lay a single layer of lemon-flavored cookies at the bottom of a 9×13 inch baking dish.
  8. Spread half of the cream cheese mixture over the cookies, smoothing it out with a spatula.
  9. Pour half of the lemon pudding mixture over the cream cheese layer, spreading it evenly.
  10. Add another layer of cookies on top of the pudding.
  11. Spread the remaining cream cheese mixture over the cookies, followed by the rest of the lemon pudding mixture. Smooth everything out nicely.
  12. Top with a final layer of lemon cookies, gently pressing them down.
  13. Cover the baking dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, preferably overnight.
  14. Remove the lasagna from the refrigerator and take off the cover.
  15. Cut into squares using a sharp knife (dipping the knife in warm water helps for cleaner slices).
  16. Serve each square on a dessert plate, garnished with a fresh lemon slice and a sprig of mint.
