- 1/2 cup cream cheese
- 1/2 cup milk
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional for heat)
- 1/4 cup diced jalapeños (fresh or pickled)
- 1/4 cup chopped green onions
- 1/4 cup sour cream (for serving)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the russet potatoes. (You can leave the skin on for added texture.)
- Cut the potatoes into thin strips, about 1/4 inch thick.
- In a large bowl, toss the potato strips with olive oil, garlic powder, paprika, salt, and pepper until well-coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake the fries for about 30-35 minutes, flipping them halfway through, until golden brown and crispy.
- In a medium saucepan over medium heat, combine the cream cheese and milk. Stir continuously until smooth.
- Add the shredded cheddar cheese and keep stirring until fully melted and creamy. Adjust the consistency with more milk if needed.
- Stir in the chili powder, cumin, and cayenne pepper (if using). Taste and adjust seasoning if necessary.
- Remove from heat and set aside, keeping warm on low heat if desired.
- Once the fries are done, let them cool for a minute to crisp up.
- Transfer the fries to a serving platter or individual plates.
- Drizzle the warm nacho cheese sauce generously over the fries.
- Sprinkle diced jalapeños on top.
- Top with chopped green onions.
- Add a dollop of sour cream on the side for dipping and garnish with fresh cilantro if desired.
