  • 4 English muffins, split in half
  • 4 large eggs
  • 4 slices of cheese (cheddar, American, or your favorite)
  • 4 slices of cooked bacon or sausage patties
  • Salt and pepper, to taste
  • Butter or cooking spray, for greasing
  • Optional: avocado slices, spinach, or tomato slices for added flavor

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Split the English muffins in half. Optionally, toast them lightly in a toaster or on a skillet with a bit of butter until golden brown.
  3. Place the muffin halves on a baking sheet, cut side up. Optionally, spread a thin layer of butter on each half.
  4. In a medium-sized non-stick skillet, heat a small amount of butter or cooking spray over medium heat.
  5. Crack the eggs into a bowl and whisk them with a pinch of salt and pepper.
  6. Pour the whisked eggs into the heated skillet. Cook undisturbed for 1-2 minutes until the edges start to set.
  7. Gently stir the eggs with a spatula, pushing them from the edges toward the center. Cook for another 2-3 minutes until fully cooked but still soft and fluffy. Remove from heat.
  8. Place a slice of cheese on the bottom half of each toasted muffin.
  9. Add a slice of cooked bacon or a sausage patty on top of the cheese. If using optional ingredients, add them now.
  10. Spoon a generous amount of scrambled eggs over the meat layer.
  11. Place the top half of the muffin on each sandwich.
  12. For extra warmth and melted cheese, place the assembled sandwiches back in the oven for 5-7 minutes. Keep an eye on them to avoid overcooking.
  13. Remove the sandwiches from the oven and let them cool for a minute.
  14. Serve warm, either on a plate or wrapped in parchment paper for a grab-and-go option.
  15. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for about 30 seconds or until warmed through.
