- 1 cup granulated sugar

- 1/4 cup fresh lemon juice (about 2 lemons)
- Zest of 1 lemon
- 1/2 teaspoon vanilla extract
- 1 cup lemon-lime soda (like Sprite or 7-Up)
- Powdered sugar for dusting (optional)

Instructions
- Preheat your oven to 350°F (175°C).
- In a medium saucepan, melt the butter over low heat. Once melted, remove it from the heat and let it cool slightly.
- In a large mixing bowl, combine the granulated sugar, milk, flour, baking powder, and salt. Whisk until smooth, with a few lumps remaining.
- Add the melted butter, lemon juice, lemon zest, and vanilla extract to the batter. Stir gently until well combined.
- In a separate bowl, mix the lemon-lime soda with the remaining 1/4 cup of lemon juice. Pour this mixture into the batter without stirring.
- Pour the batter into a 9×13-inch baking dish, spreading it evenly.
- Pour the lemon-lime soda mixture over the batter without stirring. Optionally, sprinkle additional lemon zest on top.
- Bake for 40-45 minutes until the top is golden brown and a toothpick inserted comes out clean.
- Let the cobbler cool for 10-15 minutes before serving.
- Serve warm, dusted with powdered sugar, and topped with vanilla ice cream or whipped cream, garnished with fresh berries if desired.
Notes
- Store any leftover cobbler in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for a few seconds before serving.
