Instructions

  1. Wash the lemons thoroughly under running water to remove any dirt or wax.
  2. Zest one of the lemons using a microplane or fine grater, avoiding the bitter white pith.
  3. Cut the lemons in half and juice them using a citrus juicer, ensuring to remove any seeds. Aim for about 1 cup of fresh lemon juice.
  4. In a medium saucepan, combine 1 cup of water and 1 cup of granulated sugar. Stir over medium heat until the sugar completely dissolves (about 3-5 minutes).
  5. Remove the saucepan from heat and let it cool for a few minutes.
  6. Add the freshly squeezed lemon juice, lemon zest, and 1/4 teaspoon of salt to the syrup. Stir until well combined.
  7. Pour the lemon mixture into a bowl or container with a lid. Cover tightly and refrigerate for at least 2 hours to allow flavors to meld.
  8. Alternatively, place the bowl in the freezer for about 30-45 minutes if you’re short on time.
  9. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20-25 minutes).
  10. If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze. Every 30 minutes, scrape the mixture with a fork to break up ice crystals for about 3-4 hours until firm and fluffy.
  11. Let the sorbet sit at room temperature for 5-10 minutes to soften slightly for easier scooping.
  12. Serve the sorbet into chilled bowls or dessert glasses.
  13. Garnish with a sprig of fresh mint and a slice of lemon for an elegant touch.
