Instructions

  1. In a large mixing bowl, combine the olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, salt, thyme, and paprika.
  2. Whisk the ingredients together until well blended. The mixture should be smooth and fragrant.
  3. Taste the marinade and adjust the seasoning if necessary.
  4. Pat the chicken drumsticks dry with paper towels.
  5. Place the drumsticks in the bowl with the marinade and coat each drumstick thoroughly.
  6. Cover the bowl with plastic wrap or transfer the drumsticks to a resealable plastic bag, squeezing out as much air as possible before sealing.
  7. Refrigerate for at least 1 hour, preferably 4 to 6 hours or overnight.
  8. Preheat your oven to 425°F (220°C).

  12. Bake for 35 to 40 minutes, flipping halfway through.
