  • 8 oz cream cheese, softened
  • ½ cup powdered sugar

  • Extra lemon zest for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 12-cup muffin tin with paper liners or grease it lightly with cooking spray.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  5. Beat in the eggs one at a time, then mix in the vanilla extract, lemon zest, and lemon juice.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  7. In a separate bowl, beat the softened cream cheese with the powdered sugar until smooth. Add milk if needed for consistency.
  8. Spoon about 1 tablespoon of muffin batter into each muffin cup, filling them about one-third full.
  9. Add about 1 tablespoon of the cream cheese mixture on top of the batter in each muffin cup.
  10. Spoon another tablespoon of muffin batter over the cream cheese filling in each cup.
  11. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted comes out clean.
  12. Let the muffins cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
  13. Mix together ½ cup powdered sugar with 1-2 tablespoons of fresh lemon juice until smooth.
  14. Drizzle the glaze over the cooled muffins.
  15. Sprinkle extra lemon zest on top if desired.
