- 1 pound ground beef (or turkey)
- 1 packet taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup salsa
- 2 cups tortilla chips, crushed
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup guacamole (optional)
- 1/2 cup sliced green onions (for garnish)
- 1/2 cup chopped fresh cilantro (for garnish)
Instructions
- In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).
- Drain any excess fat from the skillet.
- Add the taco seasoning mix and 2/3 cup of water. Stir well and let it simmer for about 5 minutes.
- Stir in the black beans, corn, diced tomatoes with green chilies, and salsa. Cook for an additional 3-4 minutes until heated through. Remove from heat.
- Preheat your oven to 350°F (175°C).
- Gather a 9×13 inch baking dish.
- Spread half of the crushed tortilla chips evenly across the bottom of the baking dish.
- Spoon half of the meat mixture over the tortilla chips, spreading it out evenly.
- Sprinkle 1 cup of shredded cheddar cheese over the meat mixture.
- Repeat the layering process with the remaining crushed tortilla chips, meat mixture, and top with the remaining cheese.
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
- Let it cool for about 5-10 minutes before serving.
- Cut into the layered taco bake and serve onto plates.
- Top each serving with a dollop of sour cream and a spoonful of guacamole if desired.
- Garnish with sliced green onions and chopped fresh cilantro.
- Serve immediately while warm and gooey.
