Ingredients

  • 1/2 cup dried tapioca pearls (black or clear)
  • 6 cups water, for boiling
  • 1/4 cup brown sugar (or granulated sugar), for soaking
  • 4 cups water
  • 4 black tea bags (or 4 tablespoons loose leaf black tea)
  • 1 cup milk (dairy or non-dairy)
  • Sweetener to taste (simple syrup, honey, agave nectar, or sugar)
  • Ice cubes
  • Honeydew melon chunks (for garnish, optional)
  • Whipped cream (optional, for topping)

Instructions

  1. Prepare the Honeydew Puree: Cube the honeydew melon. Blend the melon, sugar, and lemon juice (if using) until smooth. Adjust sweetness to taste. Strain (optional) for an extra smooth puree. Chill for at least 30 minutes.
  2. Cook the Tapioca Pearls (Boba): Bring water to a rolling boil. Add tapioca pearls and cook for the time specified on the package (usually 10-15 minutes), stirring occasionally. Turn off heat, cover, and steep for another 10-15 minutes. Drain and rinse under cold water. Soak in brown sugar (or granulated sugar) for at least 15 minutes.
  3. Prepare the Milk Tea Base: Heat water to near boiling. Remove from heat and steep tea bags (or loose leaf tea) for 3-5 minutes. Remove tea bags (or strain tea). Stir in milk and sweetener to taste. Chill (optional).
  4. Assemble the Honeydew Bubble Tea: In a tall glass, add tapioca pearls. Pour honeydew puree over the pearls. Add ice. Pour in milk tea base. Stir well. Garnish with honeydew melon chunks and whipped cream (optional). Serve immediately.
